Session 1 – Introduction to Dairy Product Costing.
This webinar will introduce the participant to the basics of dairy product costing. It will explain what a Federal Milk Marketing Order is and how they operate. You will learn nine critical factors that determine a dairy plant’s cost of milk. We will review the calculation of a dairy farmer’s milk check and how to review a milk invoice from a cooperative. Dairy industry terminology is explained. This webinar is perfect for someone new to the dairy industry. It is also a great refresher for those that have years of dairy experience. Session 2 – Applying Dairy Product Costing to Finished Products.
This session will build on the dairy pricing concepts introduced in Session 1. We will take Federal Order price announcements and show how to calculate the dairy cost of various finished products. Some of the products we will calculate are: 2% fluid milk gallon, half & half quarts, cheddar cheese, ice cream mixes, yogurt and cottage cheese. We will review the differences between pricing conventional milk and organic milk and conclude with an interesting section on dairy math. Session 3 – Advanced Milk Accounting Topics.
We will discuss the differences between purchasing milk from a cooperative and non-member independent farmers, including over order premiums. We will cover the pricing of milk in non-Federal Order areas and in California. We will teach tips and techniques for effectively completing monthly state and Federal milk utilization reports. In the second hour we will talk about how dairies can measure and reduce milk shrinkage. Our experiences in many plants can show how milk loss can be reduced in your plant. The shrinkage module will be particularly useful to plant and lab employees in addition to dairy accountants.
